Mom’s Zucchini Bread

I have no idea where my mom got this recipe for zucchini bread. All I know is she made it a lot growing up. This was my first time making it myself. It came out like I remember but I left out the nuts. My favorite way to eat it is covered in cream cheese. I can transform anything healthy into something bad.

Ingredients
2.5 cups sugar
3 cups flour
3 eggs
3 tsp vanilla
1 cup oil
1 tsp salt
2 cups peeled & shredded zucchini
3 tsp cinnamon
1 tsp baking soda
1 cup walnuts
1/4 tsp baking powder

Instructions
Beat eggs, add oil, sugar, zucc and vanilla (mix lightly but well). Add flour, salt, bp, bs and cinnamon. Mix then add nuts. Grease 2 loaf pans and bake 1 hour @325 degrees.

Note: these freeze well.
